My kids agree on practically nothing when it comes to dinner–this recipe for macaroni and cheese included. Our middle son, under no circumstances, will eat pasta. My oldest son practically eats nothing but pasta (with meat sauce). And their sister prefers her pasta to come slathered with a creamy alfredo sauce or cheese. However (embarrassingly) she always liked the boxed mac & cheese more than any homemade version I served her. But they all agree that this gluten-free stovetop macaroni and cheese is pretty much the best thing ever.

How to Make the Best Gluten Free Stovetop Macaroni and Cheese Evah!

I had given up on homemade macaroni & cheese for a long time. Why bother to make a from-scratch sauce when my kids just turned up their nose? But then I discovered a method to make it on the stove top that everyone (except my one son who refuses pasta) loves–adults included. It’s kind of revolutionary really. And all kinds of crazy awesome. I must warn you, though, this is NOT a health food…you’re not one of those people who thinks being gluten-free will help you lose weight, are you? Good.

Ingredients:

  • 4 tablespoons butter
  • 1 onion finely chopped
  • ¼ teaspoon oregano
  • 1 teaspoon salt
  • 1 tablespoon gluten-free all-purpose flour blend
  • 3½ cups half and half
  • 8 ounces about 3 cups dry gluten-free macaroni (I prefer Ancient Harvest Quinoa Pasta)
  • 2 cups sharp cheddar cheese freshly grated

Instructions

Melt the butter in a large skillet or shallow casserole dish over medium-low heat. Add the onion and cook for 5 minutes, stirring occasionally until onion is soft and translucent. Stir in the oregano, salt and flour and cook for 1 minute more.


Add the half and half and pasta and bring to a boil. Cover, reduce heat to low and simmer for 15 minutes or until pasta is cooked through.


Add the cheese and stir until melted. Serve immediately.

The one caveat to this gluten free stovetop macaroni and cheese is that it must be served immediately or the sauce can become clumpy. But I think you’ll find that once you set this dish on the table, it will disappear in a few seconds flat.

This incredibly simple stove top mac & cheese far surpasses any recipe I've tried in both flavor and texture. It is crazy rich and crazy delicious. For my family of 5, I always double the recipe and for best results, serve it immediately–as it sits the sauce will begin to thicken.

        1. That is the brand I recommended. Michael was referring to another comment that recommended Dream Works Pasta, which is NOT gf. 🙂

    2. Michael is right. I definitely can’t eat that brand of pasta…it contains semolina flour (which is not gluten-free) and has added wheat gluten. I’ll stick to gluten-free. 🙂

  1. Have you tried Tinkyada? Whole Foods sells their organic brown rice pasta – elbow mac and spirals have become my go-to pasta. They even provide energy-saving cooking instructions on the front of the package and it comes out perfectly al dente every time. I am not sure how it might work with this recipe as you cook the pasta in the half and half mixture (which gets two thumbs way up for pure decadence!) – but I cannot wait to give it a try…thanks!

  3. Hello – I’m sure it would impact the taste, but do you think the texture would suffer too much if you cut the half and half with a lighter dairy product, or just used 2%? Eating GF has not been kind to my weight! Thanks!

    PS – I’ve heard jovial makes good GF spaghetti. I can’t have quinoa so I’m always on the lookout for other GF pastas.

    1. Caitlin, I’ll be honest with you–I have never tried it with anything but half and half. But I say give it a try…I totally understand the weight gain thing. 🙁 I like the gf penne from Trader Joes. Jovial is good too. For this recipe, I’d try to find a macaroni shape or something short, like penne. 🙂

      1. I used 1 cup half & half, with 2.5 cups 2% milk. This recipe was amazing. Though, I did use pre-shredded cheese, which may have helped thicken it (since the recipe said not use it). Fabulous!
