As the autumn breeze blows in (or here in SoCal, the Santa Ana winds) and leaves start to turn, there’s one flavor that captures the essence of the season like no other – pumpkin! And what better way to enjoy this fall favorite than in these delectable gluten-free pumpkin oatmeal cookies? These delightful treats combine the rich, comforting flavors of pumpkin and spices with the wholesome goodness of oats, making them a perfect companion for cozy evenings and gatherings.

This recipe is a riff on my famous (among friends) Salted Oatmeal Butterscotch Cookies. Add some pumpkin and spices and you’ve got yourself the perfect little autumn cookie. Bring these to your bake sales, bring them to the office, tuck them in your kids lunches…or, if you’re like me, hide them in the pantry so you don’t have to share them. They go so well will my morning coffee. I’m an adult so I can have cookies for breakfast if I want, okay??!? (I just won’t let the kids see). Plus with all those healthy oats and pumpkin puree, they are practically a health food. Ahem.

Why do oatmeal cookies taste so good?

Oatmeal cookies are an incredibly cozy, delicious cookie, especially if you add spices. These gluten free oatmeal pumpkin cookies have all the delicious spices you’d expect in a fall cookie — cinnamon, cloves, nutmeg and ginger. But you could also just use “pumpkin pie” flavored spices and call it a day!

Is oatmeal gluten free?

Yes, but there is a caveat — while oatmeal is a naturally gluten-free grain, there is a high risk of cross contamination with other gluten containing grains. Both because of where it’s grown (often near wheat fields) and how it’s processed. Be sure to look for certified gluten free oats. Sometimes people with celiac disease can still be sensitive to oats. So if you find yourself having a reaction, obviously avoid all oats, even those that are certified gluten free.

Gluten-Free Pumpkin Oatmeal Cookies

Ever since I tasted a Salty Oat Cookie (a lightly salted, thick oatmeal cookie) in Cape Cod, I have been salting my oatmeal cookies on the outside rather than on the inside. And these spicy, cakey gluten-free Pumpkin Oatmeal Cookies are no exception.

  • Preheat the oven to 350°F and line two baking sheets with parchment paper.
  • Whisk flour, baking soda, spices and xanthan gum together in a medium bowl. In another large bowl cream the butter with the sugars. Whisk in the pumpkin, egg and vanilla extract until smooth. Stir in the dry ingredients and beat until fully incorporated.
  • Stir in the oats and butterscotch chips. Spoon out the cookie dough into balls (about 1 tablespoon each) and place on the prepared baking sheets about 2 inches apart. Sprinkle each lightly with Maldon salt.
  • Bake for 15-18 minutes, or until lightly golden brown. The cookies will be puffy and soft.
