Strawberry Coconut Margarita
Hope you all have had a fun-filled week. I know I have, but I’m totally ready to get my weekend started. Today our featured guest blogger is Sarah Hornacek of Sarah Bakes Gluten Free Treats who has shared this delightful Strawberry Coconut Margarita recipe! Sarah and I met online this past year, but happily we had the chance to get to know each other in  person at the Gluten Free Expo in San Francisco. She brought along her husband, who suffers from celiac disease, but left her two adorable children at home (because we all need a weekend away every now and again, yes?).

Sarah was an avid baker before she learned that her husband has celiac disease. Soon after, she discovered that she also suffers from a gluten intolerance (and dairy intolerance), as does her young son. Sarah had little choice but to learn how to adapt all her fabulous recipes to be gluten and dairy free (many are vegan as well).

Her blog is lovely and inspirational–often times I find myself wanting to lick the screen.  Earlier this week she posted a recipe for a gorgeous gluten-free vegan mocha layer cake.

Strawberry Coconut Margarita

Strawberry coconut margaritas…perfect for your next girls night or when you just need to relax with a creamy, dreamy drink.  This one is my all time fave!  I love blended strawberry margaritas, but I wanted to give them a little twist.  I start off with Golden Margarita Mix (which I buy at Costco) and it already has the perfect amount of alcohol added.  I toss in some ice, frozen strawberries, coconut milk and a little honey.  Then I blend it to perfection.  This drink is fruity, refreshing and oh so delicious!

I agree! Normally I don’t like my margaritas blended, but with the added frozen strawberries, this is practically an adult smoothie (and I totally think it’s good for you too). Cheers!

This dreamy, creamy margarita is sweet and refreshing. Serve it for your next girls' night or pool party. The pink Himalayan salt isn't necessary, but it is so beautiful on the rim it's worth seeking it out. Look for it in the seasoning section of natural foods stores.
Serves: serves 2
Ingredients
  • 1½ cups ice
  • 1 cup frozen strawberries
  • 1 cup ready-to-drink Golden Margarita Mix (tequila and triple sec added)
  • ½ cup unsweetened coconut milk
  • 2 tablespoons honey
  • pink Himalayan salt (for garnish)
Instructions
  1. Rim two glasses with water and dip edges into pink Himalayan salt. Set aside.
  2. In blender, combine ice, frozen strawberries, margarita mix, coconut milk, and honey.
  3. Blend on high until smooth. Pour into prepared glasses.
  4. Serve immediately.

    1. Hi Nathalie,

      Sarah buys her golden margarita mix at costco. It is pre-sweetened and already has alcohol. If you can’t find a good mix that you like, try mixing 1-2 ounces of tequila with 1-2 ounces of triple sec, the juice of one lime, and 1 tablespoon of agave syrup. Then proceed with the recipe as directed.

  2. Does Kroger carry the Golden Marg. Mix? An where at Walmart is the coconut milk located??

    1. Both the Golden Margarita Mix and the coconut milk should be located at major retailers. Coconut milk is usually in the Asian food section of your grocery store. 🙂

  3. I really hope you respond to this by tomorrow! Did you crush up your himalayan salt? It looks very fine. The only kind I can find is very chunky. thanks in advance!!!

    1. So, I have pink sea salt that is very fine. But you can crush it in a blender (or just use kosher salt). Cheers!

  4. This is genius!! I am having a taco & tequila night tonight with my girlfriends and was looking for some unique margarita recipes to try! I absolutely love coconut milk, I use it as creamer in my coffee in the morning actually. Thank you so much for sharing this recipe, I can’t wait to try it tonight!
