Delicious Gluten Free 4th of July Desserts
On the 4th of July we often find ourselves gathered with friends and family to celebrate, watch fireworks and eat delicious food. Whether you’re at a potluck picnic in the park or a backyard BBQ, gluten free 4th of July desserts are a must. I’m usually in charge of desserts in our family – here are a few of my favorites to bring to a 4th of July party.

Red, White and Blueberry Shortcake with Gluten Free Biscuits
The gluten-free biscuit is flaky and delicious, subtly sweet, and the perfect vehicle for fresh California strawberries. But why stop there? I’ve also added raspberries, blackberries and blueberries. Whipped cream is a must, but the flavorful red wine syrup brings this gluten-free shortcake recipe from basic to baller.

Fresh Watermelon Cake with Summer Berries
This adorable fresh watermelon “cake” is actually a whole, peeled watermelon! Topped with freshly whipped cream and summer berries, including strawberries, raspberries, blueberries and blackberries, this is a not-too-sweet treat that we will enjoy all summer long.

Gluten Free “IT’S-IT” Ice Cream Sandwich
This recipe is a copycat “IT’S-IT” and obviously, my version is gluten-free! IT’S-ITs are an ice cream sandwich comprised of a scoop of vanilla ice cream sandwiched between two oatmeal cookies. Then the whole thing is dunked in dark chocolate. This gluten free version is just as good as I remember (or even better)! The cookies stay crispy, the chocolate coating is so rich and delicious. It’s an amazing flavor combination that I know you’ll love!

Gluten Free Peach Blueberry Cobbler
This delicious and easy Peach Blueberry Cobbler is bursting with summertime flavors. Juicy peaches and ripe blueberries are tossed with a touch of cinnamon and cardamom to bring out their flavor. It’s topped with a gluten free cobbler that is so crisp and buttery! Serve it warm with a scoop of ice cream (or two) and a spoon to scoop up all the luscious juices.

Homemade Fresh Blueberry Ice Cream
Summer means ice cream – and there is nothing more delicious than homemade! I’ve been making ice cream for years, and I’m pretty solidly on Team Non-Custard (AKA Philadelphia style ice cream). When you make ice cream without a custard base, it literally takes five minutes to get it ready to go in the ice cream maker. A quick blitz in the blender is all that’s required to prep this, then it’s 30 long minutes until you have the creamiest, most delicious ice cream ever. I promise that it’s very easy to make ice cream from home.

If you’re making homemade ice cream, the next thing you’re going to need is homemade waffle cones! These gluten-free ice cream cones taste just like the waffle cones from the ice cream shop. These blueberry + lemon gluten free ice cream sandwiches are so full of summer goodness! In this recipe, refreshing homemade blueberry ice cream is piled into crisp, lemon lavender snickerdoodles. It’s truly one of my favorite flavor combinations, and it’s as bright and zesty as the season itself!

Super Easy Strawberry + Buttermilk Ice Cream
There’s nothing better than homemade ice cream on a hot day. I have vivid memories of the old crank and rock salt ice cream churner that my mother dragged out of the storage closet once a year on Independence Day. What was a chore for the adults, was a coveted job for the kids. We jockeyed for position at the hand crank knowing the prize for our hard work would be an ice cream cone piled high with the most glorious, creamy confection. My favorite flavor, hands down, was always homemade fresh strawberry buttermilk ice cream.
