We like to make a big batch of these and pop them in the freezer. That way, on harried mornings, we can pop them in the microwave for just ONE minute, and breakfast is served.
How to Make Green Chile Ham & Egg Cups
These green chile ham and egg cups are so easy to make. Here’s what you’re going to need to make one dozen:
- 10 large eggs
- 1/2 cup grated pepper jack cheese
- 1, 4 ounce can of diced green chiles
- 1/4 cup of crème fraiche
- 2 tablespoons diced chives
- 2 tablespoons chopped cilantro
- 1 teaspoon fine sea salt
- 12 slices of (gluten-free) deli ham
Preheat the oven to 350 degrees F and spray the cups of a 12-cup muffin tin with gluten-free cooking spray. Insert a slice of ham into each cup and press to form a bowl shape.
Crack the eggs into a large bowl and whisk. Add the pepper jack, diced green chiles, crème fraiche, chives, cilantro, and salt and whisk until smooth. Pour the egg mixture into the prepared ham bowls.
Bake for about 30 minutes, or until the eggs are puffed and golden. Serve immediately!
How to Garnish the Green Chile Ham & Egg Cups
The sky is the limit here, but we recommend topping the egg cups with sliced avocado, jalapeno slices, chopped tomatoes, more chives and fresh cilantro. And don’t forget the hot sauce. If you’re feeling eggstra decadent, you can also top with an additional dollop of crème fraiche (or sour cream).
Can I Make Green Chile Ham & Egg Cups Ahead of Time?
You can absolutely make these ahead of time, and that is part of the appeal. We like to make a big batch, then let them cool to room temperature. We then wrap each egg cup in plastic wrap and freeze. When we want a quick breakfast, it’s already prepared and ready to go. Simply pull the egg cup out of the freezer, unwrap and heat in the microwave for one minute (covered with a paper towel). How convenient is that?
