Happy Friday! Have you missed the Cocktail O’Clock feature these last two weeks? I know I have. Life. It’s busy you know? Anyway, I’m happy to be back with a great cocktail to kick off summer. The recipe for a Skinny and Fizzy Margarita comes from Alyssa, Simply Quinoa, and recent transplant to New York City (jealous!!).

Alyssa is another fabulous blogger I met at the Nourished Food Blogger Conference. She has been gluten free for over two years, and has noticed that her health issues (mostly stomach pain) improved dramatically. And she’s even one of those lucky girls who actually lost weight on the diet.

Her recipes are healthy, delicious, and many of them are quinoa based. Her blog is as gorgeous as she is, and I can’t wait to try her new recipe for Cilantro-Quinoa Turkey Burgers with Garlicky Kale (on her scrumptious gluten-free English muffins).

In the meantime, I know what I’m drinking this weekend.

Skinny and Fizzy Margarita

When it comes to homemade cocktails, I’m all about simplicity. In fact, even when I’m out on the town, I usually tend to enjoy drinks with fewer ingredients more than a hot pink martini with some frou-frou name. Plus all that added sugar makes my stomach turn.

So for me, a perfect cocktail only takes a few ingredients.

And as they usually do in my house, it starts with tequila. For many people, even the sound of tequila makes them gag. They’ll sip down those sugar filled margaritas like it’s their job, but they don’t think about tequila being the main ingredient.

Personally, I think tequila is one of the most palatable and easy to drink alcohols out there. It brightens up when you add strong citrus flavors and just a hint of sweetness (and salt) and goes down like liquid gold.

This particular cocktail is a great summer drink because it’s light, very low in sugar (in fact can easily be made sugar-free), but has a fresh, bright taste with a nice kick of lime. I’m calling it my Skinny & Fizzy Margarita even though it’s not a traditional margarita. It has those flavors, but is fizzy and delicious!

This light and fizzy cocktail by Alyssa Rimmer of Simply Quinoa is refreshing and easy to make. Serve it poolside, or at your next summer gathering.
Serves: 2 cocktails
Ingredients
  • 3oz tequila
  • Juice of 2 limes
  • 4-6 oz club soda / seltzer water
  • 6-8 ice cubes
  • 2 packets stevia (or sugar-free substitute of choice) or 2 teaspoons simple syrup
Instructions
  1. Blended: blend all ingredients in a high-powered blender until the ice is crushed and smooth. Pour into two glasses (preferably chilled) and serve.
  2. On the rocks: add the 3-4 ice cubes into a glass (preferable chilled). Add 1.5 oz of tequila, half the club soda, juice of one of the limes, and half the sweetener of choice. Stir and serve. Repeat with the remaining ingredients for the other drink.

  1. Fabulous Skinny “Margarita” recipe! I make one nearly identical but with Lemon Lime Twist Zevia. It is all-natural, sugar-free and has no calories. So easy for summer! xo
