Lemon Lavender Gin Summer Spritz

Lemon Lavender Summer Gin Spritz

Alison Needham
This light and refreshing Lemon Lavender Summer Spritz, made with the gorgeous, purple hued Empress Gin, is the cocktail we'll be drinking all summer long. Let’s be honest, this beautiful tipple is pretty much spiked lemonade. But instead of plain simple syrup, we've infused it with dried lavender petals and pink peppercorns.

  • Put the sugar, water, lavender and peppercorns in a small pan and heat just until the sugar is dissolved. Remove from heat and let the flavors infuse for 10 minutes, then strain and refrigerate until ready to use.
  • Make the cocktail. Fill a cocktail shaker and four glasses with crushed ice. Add the gin, simple syrup, and lemon juice to the shaker and shake for 10 seconds. Strain the mixture evenly into the prepared glasses and top with sparkling water. Garnish with lemon slices and a sprig of fresh lavender. Serve immediately.

Empress Gin is has a beautiful purple color and makes this cocktail really special. If you don't have any, you can replace it with regular gin, but it won't have the same vibrant color.
