Fresh Watermelon Cake with Summer Berries

This adorable fresh watermelon “cake” is actually a whole, peeled watermelon! Topped with freshly whipped cream and summer berries, including strawberries, raspberries, blueberries and blackberries, this is a not-too-sweet treat that we will enjoy all summer long.

  • Cut off the ends of a medium sized watermelon.
  • Stand the watermelon up on one of the cut ends, and using a sharp knife, cut off the rind all the way around the sides of the watermelon. Take your time here so you can make a nice round cake shape.
  • Whip the cream to soft peaks using a hand mixer, stand mixer or immersion blender. Add the powdered sugar and vanilla extract and continue to whip until it has medium-stiff peaks.
  • Top the watermelon cake with freshly whipped cream, sweetened with a touch of powdered sugar and vanilla. Using a large star tip, pipe a decorative edge around the bottom of the cake if desired.
  • Add summer berries on top of the whipped cream, along with edible flowers, flag picks or other festive touches. Serve immediately.
