This adorable fresh watermelon “cake” is actually a whole, peeled watermelon! Topped with freshly whipped cream and summer berries, including strawberries, raspberries, blueberries and blackberries, this is a not-too-sweet treat that we will enjoy all summer long.
Stand the watermelon up on one of the cut ends, and using a sharp knife, cut off the rind all the way around the sides of the watermelon. Take your time here so you can make a nice round cake shape.
Whip the cream to soft peaks using a hand mixer, stand mixer or immersion blender. Add the powdered sugar and vanilla extract and continue to whip until it has medium-stiff peaks.
Top the watermelon cake with freshly whipped cream, sweetened with a touch of powdered sugar and vanilla. Using a large star tip, pipe a decorative edge around the bottom of the cake if desired.
Add summer berries on top of the whipped cream, along with edible flowers, flag picks or other festive touches. Serve immediately.
