Sometimes we all have those mornings when we absolutely don’t have time for breakfast. For days like those, a quick meal is absolutely necessary to get you through. These Green Chile Ham & Egg Cups are the perfect grab-and-go, low carb breakfast recipe that the whole family will love.

  • Preheat the oven to 350 degrees F and spray the cups of a 12-cup muffin tin with gluten-free cooking spray. Insert a slice of ham into each cup and press to form a bowl shape.
  • Crack the eggs into a large bowl and whisk. Add the pepper jack, diced green chiles, crème fraiche, chives, cilantro, and salt and whisk until smooth. Pour the egg mixture into the prepared ham bowls.
  • Bake for about 30 minutes, or until the eggs are puffed and golden. Top with chopped tomatoes, avocado slices, cilantro and chives and serve immediately!

Notes

You can absolutely make these ahead of time, and that is part of the appeal. We like to make a big batch, then let them cool to room temperature. We then wrap each egg cup in plastic wrap and freeze. When we want a quick breakfast, it’s already prepared and ready to go. Simply pull the egg cup out of the freezer, unwrap and heat in the microwave for one minute (covered with a paper towel). How convenient is that?
