Sometimes we all have those mornings when we absolutely don’t have time for breakfast. For days like those, a quick meal is absolutely necessary to get you through. These Green Chile Ham & Egg Cups are the perfect grab-and-go, low carb breakfast recipe that the whole family will love.
You can absolutely make these ahead of time, and that is part of the appeal. We like to make a big batch, then let them cool to room temperature. We then wrap each egg cup in plastic wrap and freeze. When we want a quick breakfast, it’s already prepared and ready to go. Simply pull the egg cup out of the freezer, unwrap and heat in the microwave for one minute (covered with a paper towel). How convenient is that?
