  • Make the simple syrup. Mix the sugar with one cup of water in a small saucepan. Add the celery, sage and thyme. Heat over medium high until the mixture begins to boil. Turn the heat down and simmer for 10 minutes. Set aside to cool completely. Pour the syrup through a sieve to strain out the solids.
  • Once the syrup is cool you can make the cocktails. Fill a stemless wine glass with crushed ice. Add one ounce of celery simple syrup, 2 tablespoons lemon juice, and one ounce of gin to each glass. Top with sparkling wine. Garnish with lemon slices, thyme sprigs and a leafy stalk of celery and serve immediately.

Notes

Reserve any extra celery simple syrup covered tightly in the refrigerator.
